South Texas Beans And Rice Recipe
- 1 1/4 lbs. dry pinto beans
- 7 c. water
- 1 sm. ham hock
- 1 med. onion, minced
- 2 cloves garlic, chopped
- 1 1/2 teaspoon salt
- 1 pound smoked sausage, thickly sliced
- 1 (10 ounce.) can tomatoes with green chilies pepper, undrained
- 1/2 c. uncooked regular rice
- Sort and wash beans; combine beans, water, ham hock, onion, garlic, and salt in large pot and bring to boil.
- Cover and reduce heat and simmer for 1 hour, stirring occasionally.
- Remove ham hock; shred ham from bone with a fork and return ham to bean mix.
