Spicy Catfish with Bell Peppers and Onions

  1. Season fish with salt and pepper.
  2. Dust lightly with flour.
  3. Heat 2 tablespoons oil in heavy medium skillet over medium-high heat.
  4. Add fish to skillet.
  5. Cook until golden brown and just opaque in center, about 4 minutes per side.
  6. Transfer fish to plates.
  7. Add 1/2 tablespoon oil, onion and bell peppers to same skillet.
  8. Saute until crisp-tender, about 4 minutes.
  9. Add vinegar and jalapeno.
  10. Stir 1 minute.
  11. Season mixture with salt and pepper.
  12. Spoon over fish.
