Crockpot Chicken & Black Bean Chili
- 4 large tyson boneless skinless chicken breasts (8 oz each)
- 15 ounces low sodium black beans
- 10 ounces Healthy Request cream of mushroom soup
- 1 ounce mccormick's low sodium taco seasoning
- 1 cup pace chunky salsa
- 12 cup KNUDSEN Light Sour Cream (optional if you prefer a more spicy chili)
- Place chicken, black beans, soup, taco seasoning and salsa in your crockpot & let cook 4-6 hours on low depending on your crockpot.
- About 1 hour before serving shred/cut up chicken while in crock pot and add sour cream.
- Let shredded chicken soak up some more of the flavor for that last hour.
- If you like your chili more spicy, omit the sour cream.
- I sprinkled my chili with some low fat cheese (not included in above nutritional info).
- Top with your favorites - but make sure to count the calories!
