Black Eyed Peas And Sausage Jambalaya Recipe
- 1 lb white onions, minced
- 1 bn green onions, minced
- 1 x green pepper, minced
- 2 x cloves garlic, chopped
- 1/2 c. parsley, minced
- 1 1/2 lb salt pork, boiled once, cut into small pcs
- 1 1/2 lb warm smoked sausage, cut into 1/2in pcs
- 1/2 lb dry blackeyed peas, boiled till half done
- 6 c. water
- 1 1/2 lb rice
- Saute/fry onions, pepper, garlic, and parsley in Dutch oven with 2 tbs extra virgin olive oil.
- Add in salt meat, sausage, black-eyed peas, and rice.
- Add in water and bring to boil.
- Mix well, cover, and reduce heat to low.
- 0Cook 45 min.
- Remove cover 5-10 min before serving.
