Southern Style Chicken Fried Steak Recipe

  1. Tenderize steak by pounding to 1/4 inch thickness; cut into 4 pcs.
  2. Beat egg and water together in shallow bowl.
  3. Combine cornmeal, 1/2 c. flour, salt, and pepper together in shallow bowl.
  4. Coat steaks first with plain flour, then in egg mix and finally with the cornmeal-flour mix.
  5. Heat oil in large fry pan; brown steaks on both sides.
  6. Lower heat, cover, and cook for 20 min or possibly till tender.
  7. Remove meat and keep hot while making gravy.
  8. Pour off all but 2 Tbsp.
  9. of pan drippings, retaining any brown bits.
  10. Blend in the 2 Tbsp.
  11. of flour, then stir in lowfat milk, salt, and pepper.
  12. Cook and stir till gravy is well blended, thick, and boiling.
  13. Boil gently for 1 minute.
