Spicy Slow-Cooker Beef Stew
- 1 Tbsp. oil
- 2 lb. boneless beef chuck roast, cut into 1-inch chunks Safeway 1 lb For $4.99 thru 02/09
- 1 cup BULL'S-EYE Original Barbecue Sauce
- 1 Tbsp. finely chopped canned chipotle peppers in adobo sauce with 2 Tbsp. sauce
- 5 carrots, cut into 1-inch lengths King Sooper's 1 lb For $0.99 thru 02/09
- 6 small red potatoes (1-1/2 lb.), quartered King Sooper's 5 lb For $1.88 thru 02/09
- 2 cups sliced fresh mushrooms
- 1 large onion, coarsely chopped King Sooper's 1 lb For $0.99 thru 02/09
- Heat oil in large skillet on medium heat.
- Add meat; cook 5 to 6 min.
- or until evenly browned, stirring occasionally.
- Spoon into slow cooker.
- Mix barbecue sauce, chipotle peppers and adobo sauce; pour half over meat in slow cooker.
- Top with vegetables.
- Cover with lid.
- Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours).
- Stir in remaining barbecue sauce mixture.
