Hearty Florida breakfast
- 3 1/4 cup boiling water
- 1 cup grits
- 1/4 cup butter
- 1 tsp salt
- 8 large eggs
- 2 tbsp bacon drippings
- pinch salt
- pinch ground black pepper
- 1 lb bacon
- 4 large potatoes
- 1 large onion
- 1/2 tsp salt
- 1/2 tsp granulated garlic powder
- 1/4 cup olive oil, extra virgin
- For grits boil the water add salt add grits stir constantly so grits dont lump.
- Cover and boil till very thick and poping in air
- Add your butter cover remove from heat
- Potatoes add oil heat peel wash and slice potatoes thinly slice onions thinly fry add garlic and salt fry till crisp till crisp set on paper towels to absorb excess oil
- Bacon chop bacon into small pieces fry till crisp set to a paper towel to soak oils up leave a few squibbils of bacon pieces in pan
- Take eggs crack in a bowl one at a time make sure they are good
- Drain but save some of bacon drippings till about two tablespoons fry eggs in it till all eggs are done add back drippings as needed per egg.
- Fry eggs with runny yoke but egg whites done
- The best way to do this is as eggs fry cover as they cook the splattering drippings will cook all around the eggs cooking whites
- Serve grits on top of eggs sprinkle bacon on top of grits
- Add potatoes and onions beside hope you enjoy
