Blackberry Walnut Mesclun Salad Recipe
- 3 Tbsp. balsamic vinegar
- 1 1/2 Tbsp. extra virgin olive oil
- 2 tsp brown sugar
- 1 x clove garlic, chopped Salt and freshly grnd black pepper, to taste
- 6 c. mesclun or possibly other variety of lettuce
- 3/4 c. minced yellow bell pepper
- 1/4 c. minced fresh mint
- 1 c. fresh Blackberries
- 1 Tbsp. toasted black walnuts, (see note)
- 2 Tbsp. crumbled blue cheese
- Makes 4 servings.

- In large salad bowl, whisk together vinegar, oil, sugar and garlic; add in salt and pepper.
- Toss with remaining ingredients; serve immediately.
- Makes 4servings.
- Note: To toast walnuts, heat a small, dry skillet over medium-high heat.
- Add in walnuts and toast, stirring often, to prevent burning.
