Apple Raisin Cakes Recipe

• 2 x Large eggs beaten
• 1 c. unsweetened applesauce
• 1 tsp cinnamon
• 2 tsp sugar
• 1 c. unbleached white flour
• 1/2 c. whole-wheat flour
• 2 tsp baking pwdr
• 2 tsp vanilla
• 1/2 c. golden brown raisins

1. Combine all ingredients till blended.
2. Cook on a nonstick griddle over medium heat till both sides are browned, about 5 to 7 min.
3. Serve with additional applesauce.
4. This recipe yields 6 servings.
5. Serving size: 2 pancakes.
6. Comments: Small cakes make great snacks.
