Sauteed Collard Greens

  1. You can leave stems on and just cut into pieces or remove and discard them.
  2. Cut into approximately 1-inch pieces.
  3. Bring water to boiling point and add the collard greens.
  4. Boil for about 8-10 minutes.
  5. Drain in a colander.
  6. Press the greens down using a wooden spoons or use a kitchen towl to drain any excess liquid.
  7. Mince the garlic or finely chop.
  8. In a saucepan, heat 1 tablespoon of olive oil and butter then add in the bacon or pancetta and garlic.
  9. Fry for about 1-2 minutes on a medium heat.
  10. Add in the collard greens, salt and pepper to taste.
  11. Saute the collard mixture, stirring until heated.
  12. Takes about 5 minutes.
  13. Drizzle with lemon juice.
  14. Toss together well.
  15. Check seasoning and serve.
