Garlic-Shrimp and Cucumber
- 24 uncooked deveined peeled medium shrimp (3/4 lb./340 g) Safeway 1 lb For $8.99 thru 02/09
- 1 clove garlic, minced
- 1 Tbsp. minced fresh Italian parsley
- 1 tsp. olive oil
- 1/4 cup Kraft Mayo Real Mayonnaise
- 1 tsp. lemon zest Safeway 4 ct For $5.00 thru 02/09
- 24 Triscuit Low Sodium Roasted Garlic & Herb Crackers
- 12 thin slices English cucumber, cut in half
- Cook and stir shrimp, garlic and parsley in oil in medium skillet on medium-high heat 3 to 4 min.
- or until shrimp turn pink.
- Cool to room temperature.
- Mix mayonnaise with lemon zest.
- Top crackers with mayonnaise mixture, cucumbers and shrimp.
