Arugula, Goat Cheese and Strawberry Grilled Cheese Sandwich
- 5 1/2 ounces goat (chevre) cheese softened
- 8 slices whole wheat bread or whole grain
- 6 teaspoons jelly red pepper
- 1 cup strawberries freshly sliced
- 8 large basil leaves
- 2 cups arugula (roquette) baby, or mixed greens
- 1 x salt and black pepper to taste
- With a serving knife spread the goat cheese evenly on one side of 4 bread slices.
- With another serving knife, spread the red pepper jelly evenly on one side of remaining bread slices.
- Layer the strawberries, basil leaves, and watercress over the goat cheese slices.
- Sprinkle with salt and black pepper to taste.
- Place the red pepper jelly bread slices on top.
- In a large nonstick skillet coated with cooking spray or greased with butter, cook the sandwiches over medium heat, about 3 minutes on each side or until golden brown.
- Serve.
