Breast Of Chicken With Artichokes And Mushrooms
- 6 large chicken breasts
- 2 stalks celery
- 1 small onion, quartered
- salt and white pepper
- 2 to 4 Tbsp. butter
- 16 large mushrooms
- 1/4 onion, grated
- 1 lemon (juice only)
- 1/2 c. dry sherry
- 2 Tbsp. cornstarch
- 1 c. heavy cream
- 1 tsp. chicken stock base
- 1/8 tsp. dill weed
- 1/8 tsp. dry mustard
- 2 cans artichoke hearts
- Bring
- chicken, celery, onions, salt and pepper to boil in
- 1 quart
- water.
- Reduce
- heat;
- simmer
- until breasts are tender. Strain broth and let it cool.
- When breasts are cool, skintnd chop
- intotound slices.
- Wash and slice mushrooms horizontally into
- round
- slices.
- Saute
- in
- butter
- and add grated onion and lemon juice.
