Scampi Saute

  1. Lightly season shrimp to taste with salt and pepper.
  2. Saute in butter; turn shrimp when pink, heat through to about 350 degrees.
  3. Add mushrooms, shallots, garlic and green onions and saute for about 4 minutes.
  4. Stir frequently.
  5. Add sherry and simmer about 1 minute more.
  6. Add cream; shaking pan until sauce is thickened.
  7. Pour onto serving dish/dishes.
  8. Sprinkle with chopped parsley.
