Brussels Sprouts Souffle Recipe
- 1 pkt (10 Ounce) Frzn Brussel Sprouts
- 3 Tbsp. Butter
- 1/4 c. Flour
- 1/2 tsp Salt
- 1/8 tsp Freshly Grnd Pepper
- 1 c. Lowfat milk
- 1 tsp Grated Onions, or possibly to taste
- 4 x Large eggs, separated
- 1 c. Mozzarella Cheese, grated
- Cook sprouts, drain, and chop.
- Heat butter and add in flour, salt, and pepper.
- Add in lowfat milk and onion and stir till thickened.
- Beat egg yolks and add in to hot sauce.
- Add in cheese and cook for one minute, stirring constantly.
- Add in sprouts and remove from heat.
- Beat egg whites till stiff and fold into warm mix.
- Turn into ungreased 2-qt souffle dish.
- Bake at 300 for 1 1/2 hrs and serve immediately.
- Serves: 4 to 6
