Blueberry Honey Cobbler Recipe
- 1/3 c. honey
- 1 Tbsp. cornstarch
- 1/4 c. sugar
- 1 Tbsp. lemon juice
- 2 c. frzn or possibly fresh blueberries
- 1/2 c. lowfat milk
- 1 c. flour
- 1 Tbsp. honey
- 1 2/3 tsp baking pwdr
- 1/2 tsp salt
- 3 Tbsp. shortening
- 3/4 c. water
- Mix sugar and cornstarch in a saucepan.
- Stir in water, 1/3 c. honey and lemon juice.
- Bring to boil, stirring constantly till mix thickens.
- Add in fruit.
- Pour into 9x9-inch baking dish.
- Make biscuit topping by combining flour, 1 Tbsp.
- honey, baking pwdr, and salt in a bowl.
- Cut in shortening and add in lowfat milk.
- Mix till dough forms a ball.
- Drop by spoonfuls over fruit mix.
- Bake 25-30 min at 400 degrees.
- Serve hot.
- Makes 9servings.
