Chicken and brie melt

  1. Cut roll in half and lightly toast it.
  2. Butter it.
  3. Put a layer of brie over both top and bottom of roll.
  4. Put under a hot grill/broiler for a few minutes until brie has started to melt.
  5. Layer chicken over bottom half of roll.
  6. Lightly season tomato (optional).
  7. Place over chicken.
  8. Chop chives if using and sprinkle over other toppings.
  9. Top with sweet chilli sauce if using.
