Chicken & Ham Gumbo Recipe

  2. Heat oil in large pan over medium heat.
  3. Add in onion and garlic.
  4. Saute/fry 2 min; add in sweet red pepper.
  5. Saute/fry 2 min.
  6. Stir in broth.

  8. Add in chicken, ham, shrimp, tomatoes, bay leaf, thyme, black pepper and red pepper.
  9. Bring to boil.
  10. Lower heat; simmer 20 min.
  11. Add in okra.
  12. Simmer 10 min.
  13. Add in 1/3 c. rice to each bowl.
  14. Ladle soup into bowl.
  15. NOTE: To toast flour, preheat oven to 500 degrees.
  16. Line small cookie sheet with foil, turning edges up.
  17. Spread flour in thin layer over foil.
  18. Bake 8 to 10 min, stirring occasionally till light brown.
  19. Cold.
