Basque Lamb Chops With Tomatoes And Olives Recipe

  1. Season chops with salt and pepper; dredge with flour.Heat oil in heavy skillet till light haze forms.
  2. Add in chops and cook 2 to 6 min on each side.Transfer to heated platter.
  3. Pour wine into skillet and scrape up brown bits.
  4. Stir in tomatoes and olives.
  5. Cook over medium heat for 4 to 5 min.
  6. Season with salt and pepper.
  7. Spoon over chops.
