Tasty Tofu Patties

  1. Whisk together mayonnaise, onion, parsley, tarragon, and mustard in bowl.
  2. Mash tofu into mixture with fork.
  3. Stir in mushrooms, carrots, and sun-dried tomatoes.
  4. Fold in breadcrumbs.
  5. Heat large skillet coated with cooking spray over medium heat.
  6. Scoop tofu mixture onto hot skillet in 1/4-cup dollops, and reduce heat to medium-low.
  7. Cook 5 to 7 minutes, or until patties are golden.
  8. Flip patties, and cook 4 to 5 minutes more.
  9. Transfer to plate, and keep warm.
  10. Repeat with remaining tofu mixture until you have 8 patties.
  11. Transfer to plates, and serve each patty topped with 1/4 cup tomato sauce.
