Ann Davies' Cake
- 1 12 lbs plain flour
- 1 12 lbs currants
- 1 lb sugar
- 14 lb butter
- 12 lb lard
- 12 pint milk
- 2 eggs, beaten
- 12 teaspoon nutmeg, grated
- 12 teaspoon mixed spice
- 12 teaspoon baking powder
- 14 teaspoon salt
- Preheat oven to 350F.
- Sift all dry ingredients except for the currants together.
- Rub in the butter and lard.
- Add the currants.
- Make a well in the centre, pour in the eggs and mix together, gradually adding the milk, until you have a fairly soft consistency.
- Grease two cake tins, divide mixture equally between them and bake at 350 F for about 1 1/2 hours.
