Citrus Black Beans
- 1 cup cooked black beans
- 1/2 cup orange juice
- 1 bell pepper; half julienne
- 1 lime
- 1/2 tsp lemon peel seasoning
- 1/2 tsp ground coriander seed
- 1 pinch salt and peppercorn melange
- 1 vegetable oil; as needed
- Marinate beans in orange juice for a couple hours.
- Drain.
- Heat oil in a large saute pan.
- Add bell pepper.
- Sweat until tender.
- Add beans.
- Toss.
- Add dried spices and a squeeze of lime.
- Toss.
- Sweat until beans are heated through.
- Serve with a lime wedge.
