Zucchini Walnut Bread
- 1 c. walnuts
- 4 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 3 1/2 c. all-purpose flour
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. baking powder
- 2 c. grated zucchini (not pared)
- 1 c. raisins
- 1 tsp. vanilla extract
- Chop walnuts.
- Beat eggs; gradually beat in sugar, then oil. Combine first mixture, alternating with zucchini.
- Stir in raisins, walnuts and vanilla extract.
- Turn into 2 greased and lightly floured loaf pans.
- Bake at 350u0b0 or until loaves test done, approximately 1 hour.
- (Bake on lowest rack in oven.)
- Let stand about 10 minutes, turn out onto wire racks to cool.
- If desired, loaves may be lightly frosted with confectioners sugar, butter and vanilla mixed to a spreading consistency with milk. Makes two loaves.
- Freezes well!
