Blue Cheese Fettucinne Recipe
- 1 tbsp. butter
- 1/3 c. minced walnuts
- 1 1/2 ounce. blue cheese (1/3 c.)
- 1 1/2 ounce. Parmesan cheese (1/3 c. grated)
- 6 ounce. fettuccine
- 1/2 c. heavy cream
- Salt & pepper
- 2 tbsp. minced scallion greens
- Heat butter.
- Add in walnuts and cook till lightly browned (1 minute).
- Crumble blue cheese and grated Parmesan.
- Cook pasta in boiling water (salted) till done.
- Drain and return to warm pan.
- Stir in cream, cheeses, 1/2 tsp.
- salt and 1/4 tsp.
- pepper.
- Cook on low heat till the sauce thickens, stir in walnuts and scallions.
- Very good with chicken or possibly steak as a side dish.
- Serves 4.
