Individual Grape Upside Down Cakes
- 12 cup apple jelly
- 1 cup green seedless grape, halved
- 1 12 cups flour
- 12 cup sugar
- 1 tablespoon baking powder
- 12 teaspoon salt
- 12 cup walnuts, chopped
- 1 cup milk
- 4 tablespoons butter, melted
- 1 large egg, slightly beaten
- confectioners' sugar, for dusting
- Preheat oven to 400 degrees F.
- Grease 12 cup muffin tin, then spoon 2 teaspoons apple jelly into each, and divide grape halves into each cup.
- In a large bowl, whisk together flour, sugar, baking powder and salt.
- In a separate bowl, whisk together milk, butter, and egg.
- Stir milk mixture into flour mixture just until moistened.
- Divide dough into muffin cups and bake until golden, about 15 to 20 minutes (wooden toothpick should come out clean).
- Leave cakes in muffin tin about 2 minutes, then remove to cool on cooling rack.
- Dust with confectioners' sugar just before serving.
