Bunya Nut And Beef Casserole Recipe
- 750 gm Chopped steak
- 3 c. Finely minced or possibly chopped boiled, (3 to 4) Bunya Nuts
- 2 med Or possibly large onions
- 2 x Tomatoes, (sliced)
- 1 c. Water, up to 1 1/2
- 2 c. Boiled mashed pumpkin Pepper and salt to taste
- Fry mince in a little oil till brown.
- Remove from pan.
- Slice onions and fry in pan with a little oil till soft and clear.
- Remove from pan.
- Grease a 2 litre casserole dish.
- Cover bottom of casserole with a layer of Bunya Nuts.
- Add in a layer of onions.
- Then season mince and add in it to casserole.
- Place tomatoes on top of the mince, then the remainder of the onions.
- Add in just sufficient water to make it all moist.
- Add in another layer of Bunya Nuts.
- Top with mashed pumpkin.
- Cover and cook in a moderate oven for 1 - 1 1/2 hrs.
- Serves 4 to 6.
