Sweet and Spicy Nuts
- 3 cups walnuts (or a mix of all three) or 3 cups pecans (or a mix of all three) or 3 cups almonds (or a mix of all three)
- 2 -3 cups molasses
- cajun spices
- cayenne pepper
- hot paprika or smoked paprika
- Preheat oven to 350F In a heavy-bottomed saucepan, cover nuts completely with molasses and bring to a boil for 3 minutes, taking care not to burn mixture.
- Thoroughly drain nuts in a colander and spread them out on a parchment paper-lined cookie sheet.
- Sprinkle with spices, to taste, if desired.
- Bake for 7-8 minutes (or until molasses become slightly frothy), then let cool.
- Break nuts apart and store them in a covered glass container, or put them in a fancy tin or mason jar and give them for Christmas gifts.
