Pumpkin Cake
- 2 c. flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. pumpkin spice
- 1/4 tsp. nutmeg
- 2 c. sugar
- 4 eggs
- 1 tsp. vanilla
- 1 c. oil or 1 c. applesauce
- 1 (16 oz.) can pumpkin
- Cream Cheese Frosting
- pecan halves
- Combine first 6 ingredients; set aside.
- Combine sugar and eggs in a large bowl and beat at high speed with mixer until light and fluffy.
- Add oil, vanilla and pumpkin until blended. Gradually add flour mixture until blended.
- Add flour mixture, beating at low speed.
- Pour batter into 9-inch tube pan.
- Bake at 350u0b0 for 1 hour.
- Cool in pan 10 minutes.
- Remove from pan and let cool.
- Frost with Cream Cheese Frosting.
