Cranberry Nut Loaf
- 2 cups flour, all-purpose
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 2 tablespoons sugar brown
- 1 each oranges
- 2 tablespoons vegetable oil
- 1/2 cup milk
- 1 large eggs
- 1/2 cup walnuts chopped
- 1 cup cranberries
- Preheat oven to 350F (180C).
- Sift together in bowl flour, baking powder, salt, and sugars.
- Juice orange and grate zest.
- Put grated zest and juice in 1-cup measuring cup.
- Add oil.
- Fill with milk to 3/4 cup measure.
- Beat egg into mixture and add to dry ingredients.
- Mix thoroughly and add walnuts and cranberries cut in 2 to 3 pieces.
- Bake in loaf pan one hour.
- Cool
