Pretty Poppy Seed Muffinettes
- 1 large egg
- 1 large egg white
- 3 tablespoons poppy seeds
- 14 teaspoon salt
- 2 tablespoons canola oil
- 4 tablespoons unsweetened applesauce
- 2 teaspoons baking powder
- 34 cup sugar
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- Preheat oven to 350 degrees F(200 degrees C).
- Coat muffin tins with muffin baking cups.
- In a small bowl mix together flour, baking powder, salt and poppy seeds.
- In a medium bowl beat egg, egg white, sugar and oil until smooth.
- Add the applesauce and mix until well blended.
- Slowly add flour mixture to medium bowl until all ingredients are blended together.
- Spoon batter into muffin cups (two-thirds full) and bake 10-15 minutes until light brown and tooth pick inserted in the middle comes out clean.
- Remove from the oven and cool muffins in baking tin for 10 minutes.
- Enjoy.
