Thanksgiving Leftover En Croute
- 1 box pepperidge farm puff pastry sheets
- 1 cup shredded turkey (add more if desired)
- 1 cup mashed potatoes
- 1 cup stuffing
- 1/2 cup cranberry sauce (mine is homemade but can use canned)
- 1 egg ( to brush on top of folded puff pastry)
- 1 dash dill (per pastry on top)
- preheat oven to 400
- roll out puff pastry sheets flat onto greased baking pan (you can either roll 4 or 2.
- I did two.)
- divide cup of mashed potatoes and spread into the middle of the pastry
- divide cup of stuffing per pastry and layer on top of mashed potatoes
- divide turkey between pastries and layer on top of stuffing
- divide the cranberry sauce between pastries and spread on top
- fold up edges of puff pastries and close into a pocket
- brush top of pastries with egg
- sprinkle dill on top of pastry (optional)
- cook 20 to 25 minutes or until tops of puff pastries are golden brown and flakey
- serve with green bean casserole and enjoy!
