Strawberry Cheese Cake
- 2 pkg. thawed frozen strawberries
- 2 envelopes unflavored gelatin
- 1 1/2 c. sugar
- 1 1/2 tsp. salt
- 2 eggs, beaten
- 2 tsp. vanilla
- 2 tsp. grated lemon peel
- 1 Tbsp. lemon juice
- 6 drops red food coloring
- 3 (8 oz.) pkg. softened cream cheese
- 1 c. heavy cream
- 1 (14 oz.) can crushed pineapple
- graham cracker crumb crust
- Reserve syrup from strawberries. Blend gelatin, sugar and salt in double boiler. Stir in reserved syrup and eggs.
- Place over boiling water and cook 5 minutes, stirring occasionally. Remove from heat. Stir in vanilla, lemon peel, juice and food coloring. Beat cream cheese until fluffy and add gelatin mixture to cheese gradually, beating after each addition until smoothly blended. Whip heavy cream until soft peaks form. Fold into cheese mixture. Fold in drained pineapple and strawberries.
- Pour mixture over crust in a 9-inch spring-form pan.
- Place in refrigerator to chill overnight. Garnish as desired.
