Chicken With Broccoli Stir Fry

  1. Combine 2 tbsp cornstarch, 2 tbsp water and garlic powder in a bowl and mix until smooth.
  2. Add chicken and toss until well coated.
  3. Stir-fry chicken in a large skillet or wok over medium-high heat in 1 tbsp oil until meat is no longer pink, about 10 minutes.
  4. Remove meat from skillet and keep warm.
  5. Stir-fry broccoli in the remaining oil for about 5 minutes, then return chicken to pan.
  6. Mix together soy sauce, brown sugar, ginger and remaining 1 tbsp of cornstarch and 1/2 cup water until smooth; add soy mixture to skillet.
  7. Cook for 2 minutes, stirring frequently.
  8. Serve over rice.
