Barley Stroganoff Stew Recipe
- 1 lb beef stew meat, cut into 1/2 inch cubes
- 1/2 c. finey minced onion
- 1 x clove garlic, chopped
- 1 x (10 1/2-ounce.) can condensed beef broth
- 1/2 c. water
- 1/2 c. pearled barley
- 2 Tbsp. ketchup
- 1 tsp paprika
- 1 tsp salt, dash of pepper
- 2 c. sliced mushrooms
- 1/2 c. lowfat sour cream
- Mix all ingredients except the lowfat sour cream in a 4-quart.
- slow cooker.
- Cover and cook on low 7-8 hrs.
- Turn off heat then stir in lowfat sour cream
