Chipotle Barbecue Chicken
- 13 cups Cooking Oil
- 6 Tablespoons Tomato Paste
- 2 teaspoons Apple Cider Vinegar
- 1 teaspoon Worcestershire Sauce
- 3 Tablespoons Light Brown Sugar
- 1/4 teaspoons Salt
- 18 teaspoons Freshly Ground Pepper
- 1/4 teaspoons Garlic Powder
- 18 teaspoons Onion Powder
- 3/4 teaspoons Ground Chipotle Powder
- 5 Tablespoons Water
- 3 pounds Bone-in Chicken Breasts
- Preheat grill to medium-high heat.
- In a small bowl or glass measuring cup, mix the first eleven ingredients (everything but the chicken) until well combined.
- You may need to add more water to reach desired basting sauce consistency.
- If you want less heat from the chipotle powder, simply use a little less!
- Put chicken on grill and cook until it reaches an internal temperature of about 175 F, turning once.
- Baste chicken with barbecue sauce in the last two minutes.
- Cook until it reaches 180 F. Remove from grill to a clean plate and serve.
- Notes: Makes about 1 cup of barbecue sauce.
- If you want to use some for serving, make sure to separate it out and dont use the same sauce that you basted with.
