Chicken 'N Rice Casserole Recipe

  1. Saute/fry green pepper, onion in heated oil in covered skillet till tender, not brown.
  2. Blend cornstarch with small amount of chicken stock and soy sauce.
  3. Gently stir chicken, stock, cornstarch mix into vegetables.
  4. Cook and stir till sauce is clear and thickened.
  5. Add in tomatoes.
  6. Serve over rice.
