Mock Tuna Salad

  1. Mash the chickpeas with a fork or potato masher.
  2. Leave some chunks.
  3. Add the celery, carrot, green onions, mustard or mayonnaise, and relish.
  4. Add salt to taste.
  5. Serve on whole wheat bread or in pita bread with lettuce and sliced tomatoes.
