Mock Tuna Salad
- 1 can (15 oz.) chickpeas, drained
- 1 stalk celery, finely chopped
- 1 md. carrot, grated
- 1 green onion, finely chopped
- 2 tsp. Dijon mustard
- mayonnaise
- 1 tbsp. sweet pickle relish
- 1/2 tsp. salt
- Mash the chickpeas with a fork or potato masher.
- Leave some chunks.
- Add the celery, carrot, green onions, mustard or mayonnaise, and relish.
- Add salt to taste.
- Serve on whole wheat bread or in pita bread with lettuce and sliced tomatoes.
