Pickle Roll-ups

  1. Leave the cream cheese out for a while to soften, then dry off the pickles with paper towels.
  2. Spread the cream cheese on to a slice of corned beef, then carefully roll up a pickle.
  3. Repeat until all pickles are rolled.
  4. Slice each pickle package into 3/4-inch pieces, seam side down.
  5. Arrange on a platter, stacking if necessary.
  6. Whenever I make these, there are never any left at the end of the party!
  7. Note: When purchasing the pickles, try to choose jars that have relatively straight ones.
  8. Sometimes the minis are too bent to roll properly.
