Mother Earth Moroccan Carrot Salad
- 6 carrots, shredded
- 1 small onion, finely chopped
- 14 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon curry powder
- 14 teaspoon allspice
- 12 teaspoon salt (or to taste)
- 1 dash black pepper
- Shred or grate the carrots finely.
- You can shred the onion, too, instead of chopping it, if you like.
- Place carrots and onion in a medium serving bowl.
- In a small bowl, whisk together the remaining ingredients.
- Pour over the carrots and toss well.
- Serve at room temperature, or refrigerate.
