Broccoli & Cheddar Quiche
- 3 Broccoli Crowns, Cut Into Florets
- 3 slices Pancetta, Chopped
- 6 Large Eggs
- 2 cloves Garlic, Minced
- 1/2 cups Yellow Or Sweet Onion, Chopped
- 1- 1/4 cup Shredded Extra Sharp Cheddar Cheese
- 1/2 cups Milk
- 1/4 teaspoons Nutmeg
- 1/2 cups Grated Romano Or Parmesan Cheese
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 whole Unbaked 9-inch Pie Crust (refrigerated Or Your Favorite Recipe), Optional

- Preheat the oven to 350 F.
- 2.
- Bring a large pot of water to a boil, add the broccoli and cook for 5 minutes.
- Drain, then roughly chop the broccoli.
- Set aside.
- 3.
- While the broccoli is boiling, heat a skillet over medium-high.
- Spray with cooking spray (such as Pam) and cook the pancetta until crispy.
- Set aside.
- 4.
- In a large mixing bowl, add the eggs and lightly beat them.
- 5.
- To that same bowl, add the garlic, chopped onion, cheddar, milk, nutmeg and Parmesan/Romano.
- Mix well.
- 6.
- Fold in the cooked broccoli, pancetta, salt and pepper.
- 7.
- If youd like a crust, follow the package or recipe directions to pre-bake it.
- Then add the quiche filling.
- If youre making a crust-less quiche, spray a standard size pie pan with cooking spray and pour in the quiche filling.
- 8.
- Bake for 40 minutes or until the eggs are set.
- 9.
- Serve immediately, or cold with a side salad.
