Broccoli & Cheddar Quiche

  2. Preheat the oven to 350 F.

  4. Bring a large pot of water to a boil, add the broccoli and cook for 5 minutes.
  5. Drain, then roughly chop the broccoli.
  6. Set aside.

  8. While the broccoli is boiling, heat a skillet over medium-high.
  9. Spray with cooking spray (such as Pam) and cook the pancetta until crispy.
  10. Set aside.

  12. In a large mixing bowl, add the eggs and lightly beat them.
  13. 5.
  14. To that same bowl, add the garlic, chopped onion, cheddar, milk, nutmeg and Parmesan/Romano.
  15. Mix well.

  17. Fold in the cooked broccoli, pancetta, salt and pepper.
  18. 7.
  19. If youd like a crust, follow the package or recipe directions to pre-bake it.
  20. Then add the quiche filling.
  21. If youre making a crust-less quiche, spray a standard size pie pan with cooking spray and pour in the quiche filling.

  23. Bake for 40 minutes or until the eggs are set.
  24. 9.
  25. Serve immediately, or cold with a side salad.
