Jerk-Seasoned Chicken Quesadillas

  1. Heat oven to 425F.
  2. Combine all quesadilla ingredients in bowl.
  3. Lightly brush 1 side of each tortilla with butter.
  4. Place 4 tortillas , buttered-side down, onto ungreased baking sheet.
  5. Top each with 3/4 cup chicken mixture and 1/2 cup cheese.
  6. Place second tortilla, buttered-side up, on chicken mixture.
  7. Bake 10-12 minutes until quesadillas are lightly browned and filling is heated through.
  8. Cut each quesadilla into wedges.
  9. Serve with desired toppings.
