Bacon-Ranch Roasted Taters
- 3 lb red potatoes; quartered
- 1 cup ranch dressing
- 1 packages applewood bacon
- 1 1/2 tbsp rosemary; minced
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp paprika
- 2 tsp thyme; minced
- 2 tsp ground white pepper
- 2 pinch salt
- 1 vegetable oil; as needed
- Place bacon on a sheet tray.
- Bake at 350 for approximately 20-25 minutes or until bacon is crispy and fat is rendered.
- Remove bacon from tray and dice into medium bite sized pieces.
- Set aside.
- Toss potatoes with enough bacon fat to cover.
- Add oil only if necessary.
- Season with dried spices.
- Roast at 400 for approximately 40-45 minutes or until potatoes are caramelized and fork tender.
- Shake baking tray a few times during cooking to move around potatoes for more even caramelization.
- Place potatoes in a large mixing bowl.
- Toss with ranch and most of the bacon.
- Garnish with remaining bacon.
- Variations; Blue cheese, mozzarella, goat cheese, cilantro, parsley, horseradish, honey, roasted bell peppers or shallots, garlic, caramelized onions
