Lime and Green Onion Rice

  1. Heat the oil in sauce pot over medium to medium-high heat.
  2. Stir in the rice and toast for 1 minute.
  3. Add the lime zest and stock, bring to a boil.
  4. Reduce the heat and simmer, covered, for 18 minutes.
  5. Add the green onions and the juice of 1 lime.
  6. Fluff with fork, transfer to a serving bowl and serve.
