Cantaloupe Jam

  1. Combine all ingredients except the cherries.
  2. Cook over low heat until thick, about 1 1/2 hours.
  3. Quarter cherries and add for the last 15 minutes of cooking time.
  4. To test for doneness, take a tbsp full from the pan and place in the freezer for a few minutes.
  5. If it is thick, it is done.
  6. Immediately ladle into hot, sterile jars and seal.
