Greek Quesadilla with Tzatziki Sauce
- Olive Oil
- 1/2 cups Rotisserie Chicken, Chopped
- 5 whole Artichoke Hearts, Chopped
- 5 whole Kalamata Olives, Chopped
- 1/2 cups Spinach, Chopped
- 1/4 whole Red Onion, Chopped
- 2 Tablespoons Fresh Parsley, Chopped
- 1/4 cups Mediterranean Feta Cheese
- 1/2 cups Mozzarella Cheese
- 1 whole Large Tortilla
- 1 teaspoon Lemon Juice
- 3 Tablespoons Greek Yogurt
- 1 Tablespoon Mayonnaise
- 1/4 teaspoons Salt
- Heat oil in a large frying pan.
- To assemble the quesadilla, layer all ingredients on one half of the tortilla and fold over.
- For the tzatziki sauce, place all ingredients in a small bowl and combine.
- Carefully place the quesadilla in the frying pan and cook until cheese is melted and tortilla begins to brown, about 3-4 minutes per side.
- Serve with tzatziki sauce, and enjoy!
