Avocado Feta Salsa - Superbowl
- 2 each italian plum (roma) tomatoes chopped
- 1 each avocados ripe, peeled, pitted and chopped
- 4 tablespoons red onion finely chopped
- 1 clove garlic minced, or to taste
- 1 tablespoon parsley leaves freshly snipped
- 1 tablespoon oregano freshly chopped
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar red or white
- 3 ounces feta cheese crumbled or cubed
- In a medium or large bowl, add tomatoes, avocados, onion, and garlic, gently toss to combine well.
- Stir in parsley and oregano.
- Drizzle olive oil and vinegar.
- Add feta, and gently stir until evenly coat.
- Cover, and chill for at least 2 hours, or up to 5 hours.
- Serve.
