Healthy and Delicious Pumpkin Cookies
- 1 cup white sugar
- 1 cup brown sugar
- 34 cup margarine
- 14 cup applesauce
- 2 cups pumpkin puree
- 3 eggs
- 2 teaspoons vanilla extract
- 1 12 cups all-purpose flour
- 2 cups whole wheat flour
- 12 cup wheat germ
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 12 teaspoon ground cloves
- 1 teaspoon cardamom
- 1 cup chocolate chips
- Preheat oven to 375 degrees F (190 degrees C).
- Cream the sugars and, margarine together.
- Mix until light and well combined.
- Add eggs, one at a time, pumpkin, spices, and vanilla.
- In another bowl mix the flours, wheat germ and baking soda.
- Stir the flour mixture, one cup at a time into the creamed mixture.
- Mix until combined.
- Stir in the chocolate chips.
- Drop by teaspoons onto an ungreased baking sheet.
- Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes or until set.
- Let cookies cool on a rack.
