Fudge Brownies
- 1 12 cups butter
- 2 cups bittersweet chocolate chips or 12 ounces chocolate, chopped
- 1 12 cups all-purpose flour
- 12 teaspoon salt
- 6 eggs
- 2 12 cups sugar
- 34 cup nuts, chopped (optional)
- 8 ounces cream cheese
- 13 cup sugar
- 1 tablespoon vanilla extract
- 1 egg
- Preheat oven to 350.
- Lightly butter a 9x13" brownie pan.
- Melt butter and chocolate in a double boiler or a bowl set over simmering water.
- Set aside.
- Sift together the flour and salt and set aside.
- In a medium bowl using a whisk or an electric mixer, whip the eggs and sugar until thick and pale yellow.
- Add the chocolate, then fold in sifted ingredients.
- Fold in nuts, if using.
- Transfer to brownie pan and bake for 30 minutes, until the top looks shiny and set.
- Cool for 20 minutes before cutting.
- Marble Brownies: In a medium bowl beat until smooth 8 oz package of cream cheese, 1/3 cup sugar, 1 tablespoon vanilla extract, and one egg.
- Swirl this mixture on top of the brownie batter before baking.
