Braised Pork With Mojo Sauce Recipe
- 5 1/2 lb boneless country-style pork ribs excess fat trimmed, cut into 2" to 3" pcs
- 2 can low-salt chicken broth - (14 ounce ea)
- 1 lrg garlic head peeled, minced
- 2 x bay leaves
- 1 tsp salt
- 1 tsp freshly-grnd black pepper
- 2 Tbsp. extra virgin olive oil
- 1 lrg onion thinly sliced Mojo Sauce (see recipe)
- Preheat oven to 400 degrees.
- Combine pork, broth, half of garlic, bay leaves, salt, and pepper in large ovenproof pot.
- Cover tightly; bake till pork is very tender, about 1 hour 30 min.
- Using slotted spoon, transfer pork to bowl.
- Boil liquid in pot till reduced to 1 1/2 c., about 30 min.
- Return pork to pot; simmer till heated through, about 5 min.
- Meanwhile, heat oil in heavy large skillet over medium-high heat.
- Add in onion and remaining garlic; saute/fry till onion is tender and golden, about 12 min.
- Season with salt and pepper.
- Transfer pork to plates; spoon some pan juices over.
- Top with sauteed onion mix.
- Serve with Mojo Sauce.
- This recipe yields 6 servings.
- Comments: This is a simplified version of Havana Harry's recipe; at the restaurant, they deep-fry the pork after braising it.
