Braised Bacon Vin Blanc

  1. Preheat the oven to 180 degrees.
  2. Place the bacon in a roasting tin with the wine, stock, peppercorns, star anise, onion and apple.
  3. Cover tightly with foil and roast for 1 hour.
  4. Remove the foil and cook for a further 30 minutes until the bacon is golden brown.
  5. Transfer the bacon to a warm plate and leave to rest for at least 15 minutes before carving.
  6. Serve warm or chilled.
